Oatmeal Hotcakes with Creamy Avocado

Preparation Instructions:
For the Hotcakes
Blend all ingredients until fully combined. Put a little butter into a pan and pour in a small amount of the hotcake mixture. Cook until the surface starts to bubble, then flip. Make all the hotcakes, then set aside.
For the Creamy Avocado
Put the cream cheese and sugar in a mixer with a balloon whisk attachment. Add the Simplot Avocado Pulp and combine. Add the whipping cream and then set aside in a piping bag.
Assembly
Place the hotcakes on a plate, top with the creamy mixture made with Simplot Avocado Pulp, and serve with red fruits.
