Preparation Instructions:
For the Avocado Brownies
Melt the bittersweet chocolate, then set aside. Sift flour and cocoa together, then set aside. Cream the butter and sugar together in a mixer with a paddle attachment until reaching a light and creamy consistency. Add the egg in three stages, and then slowly add the flour and cocoa mix. Add the Simplot® Avocado Pulp, melted chocolate and nuts. Set the mixture aside.
For the Avocado Cream Cheese
Cream the sugar and cream cheese together in a bowl using a fork. Add the Simplot® Avocado Pulp. Put into a piping bag and set aside.
For the Avocado Frosting
Cream the sugar and cream cheese together in a mixer with a balloon whisk attachment. Add the whipping cream. Simplot® Avocado Pulp.
For the Brownie
Put half of the brownie mixture into a baking dish lined with non-stick baking paper. Add the avocado cream cheese on top, then finish with the other half of brownie mixture. Bake at 180°C for approximately 40 minutes. Let cool and then take out of the dish.
Assembly
Cut the brownie as desired. Decorate with avocado frosting, red fruits and shredded coconut.
