Chicken Burrito with Avocado and Spinach Dip

Preparation Instructions:
For the Spinach Dip with Avocado Pulp
Put the Simplot Avocado Pulp into the food processor with the rest of the ingredients. Process until fully combined, season and set aside.
For the Burrito Filling
Put a little oil in a pan and sauté the onion with the bell pepper. Add the chicken strips and cook fully. Season with salt and pepper, then set aside.
Assembly
Add the chicken filling and some Manchego cheese to each of the tortillas. Heat in the grill pan to create the distinctive char lines. Serve with the Simplot Avocado Pulp and spinach dip.
