Bahn Mi Meatball Potato Pops

This appetizer is not only fun but sure to impress any crowd. It's delicious and versatile too!
Preparation Instructions:
Step 1
Preheat oven to 350˚F.
Step 2
In a medium bowl combine egg and bread crumbs. Let sit two minutes until crumbs are soft and egg is fully absorbed. Combine with pork, basil, onion, garlic, Sriracha and fish sauce. Blend well and roll into approximately 1-inch balls. Place onto a baking tray and bake for approximately 12 minutes or until internal is 165°F. Keep warm.
Step 3
Heat 4 cups of mashed potatoes according to package directions. Fold carrot, daikon, jalapeño and cilantro into potatoes. Top each meatball with approximately one Tbsp. of potato mixture. Serve with a decorative toothpick.
Step 4
Combine mayonnaise and Sriracha together and place into a small decorative bowl. Serve as a dipping sauce with meatball mashed pops.
