Ingredients:

1.1kg frozen Edgell®: Sweet Potato Crinkle Cut Wedge , cooked following packet directions
600g cooked rice or grain salad of choice
200g baby rocket leaves
700g sliced cucumbers
600g sliced avocado
300g blanched asparagus
50g alfalfa sprouts
200g sliced radish
Herb yoghurt and lemon wedges, for serving

Instructions:

1. Assemble ingredients in serving bowls.

2. Serve with herb yoghurt and lemon wedges on the side.
