                              Salt & Pepper Squid with Rocket Fennel Salad

                              Crispy Salt & Pepper Squid Strips served with a fresh, peppery rocket salad, offering a balance of crunch and zest.

                              Ingredients:
                              • 40g toasted Szechuan peppercorns

                              • 30g sea salt

                              • 150g cornflour

                              • 150g plain flour

                              • 1kg frozen Topsail Squid Strips, thawed

                              • 200g rocket leaves

                              • 80g finely sliced red onion

                              • 150g sliced cucumber

                              • 200g shaved fennel, reserving fennel fronds for garnish

                              • Sweet chilli sauce, for serving

                              Instructions:

                              1. Combine peppercorns and salt together, process to a coarse powder, combine with cornflour and flour.

                              2. Toss Topsail Squid Strips through seasoned flour mixture. Deep fry until crisp.

                              3. Combine salad ingredients. Serve squid with salad and sweet chilli sauce. Garnish with fennel fronds.
