Prawn And Chorizo Paella

Prawn and chorizo paella is a flavorful Spanish-inspired dish featuring smoky chorizo, succulent prawns, and saffron-infused rice, creating a rich and satisfying meal.
Instructions:
1. Sear fish and prawns in a heavy based frypan or paella pan. Remove and set aside. Repeat with chorizo.
2. Add onions, garlic, smoked paprika and capsicum and cook until softened. Add rice and coat.
3. Combine Leggo’s Sauce, stock and saffron. Add 1/3 of the tomato mixture to frypan, stir and allow to absorb. When almost absorbed, add another 1/3 tomato mixture. Do not stir so paella begins to form a crust on the base of the frypan.
4. Add remaining tomato mixture, scatter over frozen Edgell Peas, chorizo and seafood. Continue cooking until stock is absorbed and seafood is cooked through. Garnish with parsley and serve with lemon wedges.
