Avocado Mojito

Take a traditional Mojito "next-level" by adding creamy avocado to the mix. Muddle some fresh mint and top it off with sparkling water.
Instructions:
1. Reserve 250g thawed Edgell Avocado and set aside.
2. Combine remaining avocado and agave syrup in a blender until smooth.
3. For each drink, place 25g reserved avocado, ¼ cup mint leaves and 60ml rum into serving glass and lightly muddle to extract mint flavour.
4. Fill glass with ice and top with 60g pureed avocado agave mix. Add 30ml lime juice. Top with soda water. Serve.
