4 oz Sour cream
1 oz Chipotle peppers in adobo, pureed
6 oz Simplot RoastWorks®: Flame-Roasted Corn and Black Bean Fiesta Blend 6/2.5lb
4 oz Pico de gallo
10 oz Simplot RoastWorks®: Flame-Roasted Pepper & Onion Blend 6/2.5lb
5 oz Cheddar cheese, shredded
5 oz Pepper-jack cheese, shredded
20 count Flour tortillas 6-inch
4 lb Simplot SIDEWINDERS™ Fries: Clear Coated SIDEWINDERS™ Fries 8 Cut
Preparation Instructions:
• Combine sour cream and chipotle peppers. Reserve in a squeeze bottle.
• Prepare Corn and Black Bean Fiesta blend according to package instructions. Allow to come to room temperature. Blend with pico de gallo. Reserve.
• Prepare Roasted Peppers & Onions according to package instructions. Reserve.
• Blend cheeses together and set aside.
• Warm tortillas.
• Prepare SIDEWINDERS™ according to package instructions. Reserve warm.
• To build tacos, place two SIDEWINDERS™ in a tortilla. Top with 1/2 oz Roasted Peppers & Onions, 1/2 oz shredded cheese, and 1/2 oz Corn and Black Bean Fiesta and pico de gallo blend. Drizzle with 1/4 oz chipotle sour cream.
• Repeat to complete all tacos. Serve.
