Sweet Potato Risotto with Couscous and Taleggio

This dish is a perfect example of comfort food with a twist; it's rich, creamy and packed with plant-based veggie power. Did we mention this version is also quick to prepare?
Preparation Instructions:
Step 1
Prepare sweet potatoes and couscous blend according to package instructions.
Step 2
Heat the olive oil in a large sauté pan. Add shallots and garlic and cook until softened. Deglaze pan with wine. Add broth and bring to a simmer. Stir in the prepared sweet potatoes, couscous blend, Parmesan, and cream. Return to a simmer and stir until creamy. Season to taste.
Step 3
Brown butter with sage leaves. Plate risotto, top with diced Taleggio and additional Parmesan. Drizzle with sage butter and garnish with sage leaves.
