Need a paleo option for your breakfast menu? With creamy avocado, roasted sweet potatoes, an over-easy egg, pork sausage and kale—this healthy, colorful bowl might be just the thing.
Preparation Instructions:
Step 1
Thaw avocado halves according to package instructions. Prepare sweet potatoes according to package instructions. Reserve hot. Slice each avocado half into five slices. Reserve cold.
Step 2
For each serving; place 1/2 cup of roasted sweet potatoes in a serving bowl. Place 2/3 cup of prepared kale alongside sweet potatoes. Place 3 oz. of pork sausage on other side of the bowl. Fan out avocado slices and top with an egg.
