Ancient Grains and Kale Arancini

These crispy, craveable Arancini deliver nutrition and indulgence in one easy-to-prepare bite. Serve them with fresh greens and a housemade vinaigrette for a delicious entrée salad or appetizer.
Preparation Instructions:
Step 1
Prepare ancient grains according to package instructions.
Step 2
Mix grains with Parmesan, mozzarella, parsley, egg, and breadcrumbs. Season with salt and pepper. Form mixture into 2-inch balls and chill. Dip arancini in prepared beer batter and deep-fry until golden. Hold warm.
Step 3
For the dressing, cook bacon in a sauté pan until crisp. Whisk in vinegar, mustard, honey, salt and pepper. Hold warm.
Step 4
To serve, toss greens with warm vinaigrette. Plate with goat cheese and arancini.
