1. Smashed avo toast with poached egg and mushy peas

Who knew that peas and avocado could taste so good together! Cook up some Edgell Green Peas and mash with avocado, mint, lemon, honey and fetta. Season and serve on grilled sourdough topped with a poached egg and torn mint.

2. Mexican bean and avocado toast

Lean into avocado’s Mexican origins with this delicious version of baked beans. Fry up some onion and garlic with cumin and chilli flakes, then add Edgell Black Beans and mix gently with some cherry tomatoes until heated through. Load onto toast and top with Edgell Chunky Avocado Pulp and coriander – Olé!

3. Heart-shaped egg, salmon and avo toastie

Sure to melt the hearts of all Mums, this dish is a cinch to assemble. Just use a heart-shaped cookie cutter on a piece of buttered sourdough and fry an egg in the hole. Pile up smoked salmon and Edgell Avocado Pulp on another piece of fried or grilled sourdough. Top with the egg piece, garnish and serve.

4. Pea and avo hummus Blend Edgell Green Peas and Edgell Chunky Avocado Pulp with garlic, tahini, lemon juice and olive oil. Perfect with bacon, grilled chicken or lamb (especially if you throw in some mint) or as a dip with flatbread.

5. Avo Pineapple Banana Smoothie This smoothie is a winner – blend Edgell Chunky Avocado Pulp with pineapple, banana and unsweetened coconut milk.
