Preparation Instructions:
Step 1
Prepare the filling in advance; Beat whipping cream with sugar until soft peaks form. Stir in vanilla extract and lemon juice. Fold the avocado into the mixture and whisk until combined. Refrigerate for 20 minutes until ready to use.
Step 2
To make the Tang Yuan skin; In a large mixing bowl, combine boiling water with glutinous rice flour. Then, stir in room temperature water a little at a time with a spatula.
Step 3
Knead the mixture with clean hands until a smooth, soft dough is formed. Adjust consistency by adding more water or glutinous rice flour.
Step 4
Divide the dough into equal pieces then roll each into a ball.
Step 5
To assemble, flatten a piece of dough into a round wrapper with clean fingers.
Step 6
Place a ball of filling in the center. Gently push the edges upwards to wrap the filling tightly. Gently press to seal the top completely.
Step 7
To cook; Bring a large pot of water to a boil. Gently slide in the Tang Yuan in batches. Cook them until they start to float on the surface. Remove from the water and place them in bowls.
Step 8
Serve with simple syrup or traditional ginger syrup. Enjoy!
