Thaw Simplot Harvest Fresh Avocados: Avocado Pulp according to package instructions. Set aside.
Preheat oven to 180C and line a baking tray with parchment paper.
To make the crumble topping, combine oatmeal, brown sugar, and butter in a bowl. Use your hands to work the mixture, breaking it down to create a soft crumble texture.
Spread the crumble mixture on the baking tray and lightly toast in the oven for 10 minutes or until golden brown. Lightly mix the crumbs periodically.
Meanwhile, prepare the filling by combining avocado, cocoa powder, castor sugar, milk, and vanilla.
To serve, place the filling in a ramekin or glass and sprinkle crumble on top. Enjoy!
