Smoky beef kebabs paired with a refreshing and creamy avocado dipping sauce. No outdoor grills or coals involved!
Avocado Mint Sauce:
From 2 limes
From 1 lemon
Garlic cloves, finely grated
Beef sirloin, cut into cubes
Red onion, cut into small pieces
Green bell pepper, cut into small pieces
Button mushrooms, whole
Skewers, bamboo or metal
Thaw avocado pulp according to package instructions. Set aside.
Preheat the oven to 190˚C and line a large baking tray with parchment paper.
To make the avocado mint sauce; combine all of the ingredients in a food processor or blender. Blend until smooth. Serve in a bowl.
To make the marinade; add all of the ingredients in a bowl and mix well. Place in a ziplock bag with beef cubes and marinade for at least 45 minutes. While beef marinates, soak your bamboo sticks in water.
Thread the beef cubes onto the skewers, alternating with the vegetables.
Place the kabobs on the baking tray and bake in the oven for 25-30 minutes, depending on the thickness of your beef cubes. Remember to flip halfway through.
Remove kabobs from the oven and serve with fries, paired with the avocado mint sauce.
