Cheesy, creamy goodness between two perfectly toasted slices of bread.
Thaw avocado pulp according to package instructions.
In a food processor, combine avocado, coriander leaves, chili, and lime juice, and season with salt. Blend until smooth.
Assemble the bread; place a cheese slice over it and spread avocado mixture. Place another cheese slice and sandwich with another piece of bread.
In a pan, melt butter and toast bread on medium heat. Flip on both sides and toast until golden brown and crispy.
To serve, cut each toast into two using a serrated knife. Enjoy!
