Avocado Flan
Super easy and healthy take on the classic flan.
Preparation Instructions:
Step 1
Thaw avocado pulp according to package instructions. Set aside.
Step 2
Preheat oven to 170˚C.
Step 3
In a saucepan, heat water and sugar over low heat until dissolved. Increase heat to medium-high. Make sure to constantly stir throughout this step. Cook until golden brown, wiping down the sides to remove crystals.
Step 4
Divide the caramel mixture into ramekins and swirl to equally coat the bottoms. Place them in a medium-deep baking pan.
Step 5
In a blender or food processor, combine avocado, milk, eggs, vanilla, and salt. Purée until smooth.
Step 6
Fill in the caramel-coated ramekins with the avocado mixture. Fill the baking tray with hot water, about 1 inch.
Step 7
Bake for 30-35 minutes or until they are set in the center. Remove from the oven to cool slightly before chilling them in the fridge overnight.
Step 8
To serve, run a small knife along the edge of the ramekin. Turn over on a serving plate and shake gently to release. Enjoy chilled.
