Avocado-Blueberry Pancakes
Healthy and packed with sweet and sour bits of blueberries.
Preparation Instructions:
Step 1
Thaw avocado pulp according to package instructions.
Step 2
In a bowl, whisk together flour, sugar, baking powder, and salt.
Step 3
In a food processor or blender, combine avocado, milk, egg, and vanilla. Blend until smooth.Add the avocado mixture to the flour mixture and stir until fully combined. Set aside.
Step 4
Heat a pan over medium heat. Grease with a bit of butter or oil.
Step 5
Scoop batter into the pan and dot each pancake with blueberries. Cook each side until golden brown.
Step 6
Stack pancakes and top with maple syrup or honey if desired. Enjoy!
