Asian Brunch Burger

Ingredients:
Step 1 - Brown Sugar Bacon
1 cup Brown sugar
1 cup Almonds, roasted
1/4 cup Molasses
1 Tbsp. Chinese five spice blend
to taste Salt and pepper
1 lb. Bacon, thick cut
Step 2
18 each English muffin, burger sized
1/2 cup Butter, softened
18 oz. Kewpie mayo, divided
2 Tbsp. Furikake seasoning
18 each Simplot Traditional: Old European Potato Pancake 6/5lb
4 1/2 lbs. Ground beef patty, 80/20, 4 oz. each
18 each Smoked Gouda cheese, slices
36 oz. Tomato, 1/4" slice
Preparation Instructions:
Step 1
Preheat convection to 350° F. Line a full sheet pan with aluminum foil and place a wire baking rack on top. Combine the brown sugar, almonds, molasses and seasonings in a food processor and process until the texture of a course cornmeal. Lay the bacon on the rack in a single layer and sprinkle the topping evenly over the bacon. Cover the tray with a full sized silpat mat. Bake for 15 to 20 minutes, until the topping is very browned but not burnt. If it’s underbaked, the bacon won’t crisp as it cools. While it’s hot, transfer the bacon to a plate lined with paper towels and set aside to cool. Serve at room temperature.
Step 2
For each serving; butter and toast an english muffin, spread each side with 1 Tbsp. mayo, sprinkle with furikake, prepare European pancake according to the package directions, prepare burger to customers request, top burger with cheese, two slices of tomato and remaining muffin.
