Got Leftover Turkey From Christmas? Here's What To Do With It!

Christmas may have been over now, but if you have that leftover turkey in the fridge waiting to be eaten, here’s how you can jazz it up:
100g button mushrooms, quartered
1 tbsp flour
100ml white wine
200ml chicken or turkey stock
150ml double cream
800g leftover boneless cooked turkey, chopped into chunks
Chopped parsley for garnishing
Salt and pepper to season
In a deep-frying pan, heat butter until sizzling. Add mushrooms and cook for 4 mins. Sprinkle flour and stir until the liquid thickens.
Add white wine and let it bubble for a minute, then stir in stock and bring to a boil.
Let it simmer on low heat, then slowly stir in the double cream. Season to taste with salt and pepper.
Add in the turkey chunks and simmer until they are heated through.
Remove from heat and serve with pasta, rice, or mash. Finally, garnish with parsley.
