Smashed Avo Toast with Poached Egg

Classic combination of mint, peas and avocado for this delicious smashed avo dish.
Instructions:
Step 1
Cook frozen Edgell Peas following packet directions. Refresh in iced water.
Step 2
Mash peas. Add Edgell Avocado, mint, lemon juice, lemon zest, honey, fetta and mash. Season to taste.
Step 3
Spread pea mixture over toast and top with an egg. Grind over cracked black pepper and top with torn mint leaves to serve.
