Tri-Blend Fingerling Potatoes
FINGERLING POTATOES WITH LEMON AND BLACK PEPPER AIOLI
Ingredients
1 each egg yolk
2 each lemons, juiced and zested
1 each clove of garlic (Minced)
1 tsp salt
8 oz vegetable oil
1 Tbsp coarse ground black pepper
Recipe Method
  • In food processor or a bowl, combine egg yolk, lemon juice, garlic, salt, and three ice cubes.
  • Whip eggs until light and creamy and tripled in volume.
  • Slowly add oil in a fine stream intermittently until all of the oil has been added and there are ribbons forming in the aioli when stirred.
  • Add black pepper and lemon zest.
  • Adjust seasoning as desired.
  • Thin with water if needed and readjust seasoning with a splash of vinegar.
