Ingredients
Step 1
Olive Oil 2 fl oz
Garlic, chopped 1 oz
Roastworks Mediterranean Blend 40 oz
Garbanzo Beans, drained 10 oz
Caraway Seeds, whole 1/2 tsp
Cayenne Pepper, ground 1 tsp
Coriander, ground 1 tsp
Chicken Stock 24 fl oz
Couscous 12 oz
Mint, fresh, chopped 1/3 cup
Almonds, slivered, toasted 2 oz
Recipe Method
Step 1
  • Sauté the garlic, Mediterranean Blend and garbanzo beans in the olive oil over medium-high heat for 4 to 6 minutes.
  • Add the spices and chicken stock to the pan. Bring to a boil.
  • Mix in couscous. Cover pan; remove from heat.
  • Let stand for 5 to 10 minutes. Fluff the couscous with a fork.
  • Mix in the mint and half of the almonds. Sprinkle the remaining almonds on couscous in serving bowl.
