BALLPARK FRIES
Crispy french fries drizzled to order with a rich garlic butter and dusted with grated parmesan.
Ingredients

Garlic Butter
Butter 4 oz
Olive Oil 4 fl oz
Garlic, chopped 4 oz
Salt 1 tbsp

Fries
Classic 3/8" Straight Cut 5 lbs
Parmesan Cheese, grated 11 oz
Parsley, fresh, finely minced 11 tbsp
Recipe Method
To prepare the Garlic Butter: Combine the butter, olive oil, garlic and salt in a small shallow skillet and cook over low heat for 2 to 3 minutes, stirring to melt the butter and mellow the garlic. Remove from heat and transfer to a bain-marie in a warm holding place until needed for service.

To serve the fries: Prepare 10 oz. of the Simplot fries according to the package directions. Remove from the fryer and drain them briefly. Transfer the fries to a warm stainless steel bowl, drizzle with a 1 oz. ladle of garlic butter, add 1 tbsp. of parmesan cheese and 2 tsp. of parsley. Toss to coat and transfer to a serving boat.
