Why serve a plain old blueberry muffin, when just a touch of sour cream can make a signature difference?
Ingredients
Krusteaz Basic Muffin Mix 5 lbs
Water 30 fl oz
Sour Cream 20 oz
Simplot IQF Blueberries 30 oz
Recipe Method
  1. Place dry mix, water, and sour cream in a bowl of a 20 qt mixer. Mix on low speed until combined. Do not overmix.
  2. Add in Simplot IQF Blueberries. Mix briefly just until incorporated throughout.
  3. Scale # 20 scoop or 2 -1/4- oz of batter into standard-sized muffin pans that have been sprayed with non-stick spray or lined with paper liners.
  4. Bake in a 350°F convection oven 14-16 minutes. Muffins are done when golden brown and a wooden pick inserted in the center comes out clean.
