| Recipe Method |
- Place dry mix, water, and sour cream in a bowl of a 20 qt mixer. Mix on low speed until combined. Do not overmix.
- Add in Simplot IQF Blueberries. Mix briefly just until incorporated throughout.
- Scale # 20 scoop or 2 -1/4- oz of batter into standard-sized muffin pans that have been sprayed with non-stick spray or lined with paper liners.
- Bake in a 350°F convection oven 14-16 minutes. Muffins are done when golden brown and a wooden pick inserted in the center comes out clean.
