FOUR CHEESE POTATO GRATIN
Simplot's FREEZERFRIGE Slices turns this classic into an even more profitable side.
Ingredients
Heavy Cream 1 1/2 qts
Half and Half 3 cups
Simplot FREEZERFRIGE Hash Brown Slices 7 1/2 lbs
Cheddar Cheese, shredded 6 oz
Jack Cheese, shredded 6 oz
Bleu Cheese, crumbled 6 oz
Parmesan Cheese, grated 6 oz
Salt 3 tsp
Pepper 1 1/2 tsp
Green Onions, sliced 2 oz
Recipe Method
  • Combine cream and half-and-half in a heavy sauce pan over medium-low heat.
  • Spray a 2" full-sized hotel pan with non-stick spray. Arrange half of the Simplot FREEZERFRIGE Slices in the bottom of the pan in an even layer.
  • Season potatoes with half of the salt and pepper. Sprinkle 3 oz each of the Cheddar, Jack, Bleu, and Parmesan cheeses over the potatoes.
  • Arrange remaining potatoes over top. Season with remaining salt, pepper, and cheeses. Pour heated cream and half-and-half over top of pan.
  • Cover pan with foil and place in a 325°F convection oven for 45 minutes. Remove foil and allow top to brown, approximately 10 minutes.
  • Remove from oven and garnish with sliced green onions.
