- Steamer: Place frozen potatoes in steam table pans, 4½ lbs for a half-size pan, 9 lbs for a full size pan. Cook for 16 to 20 minutes in a pressureless steamer, 10 to 15 minutes in a convection steamer and 20 to 24 minutes in a 10 psi pressure steamer. Allow to sit for 2 minutes before mixing to allow excess moisture to disipate.
- Boiling Water Method: Bring 2½ gallons of water to a boil, add 4½ lbs of potatoes. Leave heat on high. Reduce heat and simmer for 5 to 10 minutes. Drain immediately in a colandar and allow to sit for 2 mintues before mixing to allow excess moisture to dissipate.
