A classic salad that fits on any menu.


Step #1 (Dressing):

Ingredient Measurement
Simplot Harvest Fresh Avocados™: Avocado Pulp 12/1 32.0 oz
Buttermilk 16.0 fl oz
Mayonnaise 8.0 oz
Ranch dressing seasoning 2.0 oz
Cilantro, chopped 1.0 oz
Chipotle chile in adobo, pureed 1.0 tbsp

Step #2 (Salad):

Ingredient Measurement
Corn tortilla, 6" 20.0 oz
Romaine lettuce, chopped 105.0 oz
Tomatoes, seeded, diced 45.0 oz
Jicama, peeled, diced 45.0 oz
English cucumber, halved lengthwise and thinly sliced 45.0 oz
Black olives, sliced 30.0 oz
Bacon, cooked, diced 30.0 oz
Pepper jack cheese, cubed 30.0 oz


Step #1:

  • Combine all the dressing ingredients in a large bowl; whisk to blend.
  • Refrigerate the dressing until ready for service.

Step #2:

  • To make the tortilla chip strips, slice the tortillas in half and then cut into 1/8” strips.
  • Deep fry strips for 2 to 2 ½ minutes in a 350°F fryer. Remove, drain and salt.
  • To assemble each salad, place 7 oz. of romaine lettuce in a large bowl.
  • Arrange the following on top of the lettuce: 3 oz. each of tomato, jicama, and cucumber.
  • Next, arrange 2oz. each of black olives, bacon and cheese on the lettuce.
  • Sprinkle the top of the salad with 1 oz. of tortilla chip strips.
  • Serve with 4 fl.oz. of the Avocado Ranch Dressing.

Yield: 15.0 Servings (27.0 oz)
