Mesa Pork & Potato Quesadilla

Flour tortilla stuffed with grilled peppers, onion, potatoes, shredded BBQ pork, cheese, and jalapenos. Grilled to a golden brown and served with roasted corn and pepper salsa. Make for a lively Fiesta Quesadilla!! Filled with Simplot's Classic Skillet Hash Browns, RoastWorks Flame-Roasted Peppers & Onions, and shredded BBQ pork. Great served as an appetizer or main dish.

Olive oil 2.0 fl oz
RoastWorks®: Flame-Roasted Peppers & Onions 6/2.5lb 12.0 oz
Garlic, minced 1.0 oz
Jalapeno, diced 1.5 oz
Lime juice 2.0 fl oz
Cilantro, chopped 0.5 cup
Cheddar cheese, shredded 14.0 oz
Flour tortilla, 12" 24.0 count
Monterey-jack cheese, shredded 24.0 oz
BBQ pork, shredded, prepared 60.0 oz


  • Steam Simplot Skincredible Chunks in 2" perforated hotel pan for 15 minutes or until tender.
  • In large skillet, heat olive oil. Saute Simplot RoastWorks Peppers & Onions, garlic, jalapenos, and potatoes until lightly browned.
  • Remove from heat and add lime juice, cilantro, and cheddar cheese.
  • To assemble, place 1 oz. of Monterey-jack cheese on half of tortilla on preheated grill. Add on #16 scoop of potato mixture and one #16 scoop of preheated BBQ pork.
  • Fold tortilla in half.
  • Allow to grill for 2 - 3 minutes, turn, and allow other side to heat for 2 - 3 minutes or until golden brown and heated thoroughly.
  • To serve, cut into wedges.
  • Serve with Simplot RoastWorks Flame-Roasted Corn & Pepper salsa.
