Hobo-Pack Potatoes

Roasted Yukon Gold & Redskin Potatoes baked with green beans, zucchini, mushrooms, peppers, onions, and spicy seasonings, served piping hot in a foil pack. Potatoes and vegetables in one easy-to-menu, fun-to-eat foil pouch. Proof positive that big things come in small packages.


Ingredient Measurement
RoastWorks®: Yukon Golds & Redskins 6/2.5lb 40.0 oz
RoastWorks®: Flame-Roasted Peppers & Onions 6/2.5lb 20.0 oz
Simplot Simple Goodness™: Green Beans, Whole 12/2lb 16.0 oz
Zucchini, 1/4" slices 12.0 oz
Mushrooms, 1/4" slices 8.0 oz
Butter, melted 10.0 oz
Salt 2.0 tsp
Chili powder 1.0 tsp
Black pepper 0.5 tsp
Foil sheets, 12"x12" 15.0 count
Parmesan cheese, grated 2.0 oz


  • Place all vegetables into stainless mixing bowl and blend well.
  • Add butter and spices and blend well with vegetables.
  • Place 6 ounces of vegetables into the middle of each foil sheet.
  • Take each corner of foil sheet and gather up in the center and crimp the corners.
  • Place foil Hobo-Packs on sheet pans and bake in a 375°F oven for 20-25 minutes or until internal temperature reaches 165°F.
  • For service, open pack; top with 1/4 teaspoon of Parmesan cheese and serve.
